Don’t throw those pumpkins seeds away after carving your jack-o-lantern, we’ve got a recipe for you! It’s not Halloween without a crunchy, salty, roasted pumpkin seed snack, and we love them for being packed full of fiber, vitamins, and minerals. But have you tried pumpkin seeds that taste like nachos? Here’s a recipe that you will thank us for.


  • 2 tbsp. butter
  • 2 c. pumpkin seeds
  • 1 tsp. fresh cilantro
  • 1 tbsp. Taco Seasoning
  • 1 tbsp. lime juice


  1. Preheat oven to 275°. As it heats, microwave butter in 20-second intervals until fully melted.
  2. Toss the seeds in butter to coat them, then in cilantro and taco seasoning. Spread them in an even layer on a baking sheet lined with parchment paper, then cook for 20 minutes. Once they’re out of the oven, drizzle with lime juice, let cool for a few minutes, and serve.
